It's a bit tedious, really, but it works for what you want. The rest is going to be however much you've got in your port so long as you set the trade route amounts in stop 1 and 3 above the maximum of your warehouse (I usually just set it at the maximum my chosen ship can carry). The only really relevant numbers as far as the trade route is concerned are the amount of goods in stop 2, this is what you want to leave. It seems like the trade route goes ON the mountain and thus they can not reach that destination.
